Kohlrabi?!

This may not be the most familiar of vegetables, but it’s worth a try! It tastes almost like a cross between a cabbage and an apple, and if you peel it and slice it up, it’s a great crunchy snack.  Our you can do what our friend Shannon did every time a kohlrabi showed up in her CSA share:  peel and slice the kohlrabi into 1/8 inch thick slices and use it as a component in a sandwich (i.e. cheese, mayo, lettuce, tomato, mustard, and kohlrabi). I shred it into slaws or salads, and I’ve heard of others who dice it and toss it into stir-fries.  The top leaves are even edible.  So much to like about such an odd-looking creature!
