Creamy Greens and Shallots

1 tablespoons olive oil
4 shallots
1/4 cup dry white wine
1/4 cup sour cream
8 cups of greens
Salt and pepper

Heat the olive oil over medium heat.  Add the shallots and cook stirring until they begin to soften (2-3 minutes).  Stir in the wine and sour cream.  Add the greens, 1/4 tsp salt and 1/4 tsp black pepper.  Cook tossing gently until the greens begin to wilt.
