1 tablespoon sesame seeds
2 teaspoons vegetable oil
2 teaspoons chopped ginger
3/4 pound leafy greens
1/4 cup vegetable broth
1 teaspoon sesame oil
1 teaspoon soy sauce
In a small frying pan, toast the sesame seeds over medium heat, shaking the pan frequently until lightly colored, 3-4 minutes. Immediately pour onto a plate to cool.
Place a large saucepan over high heat until hot. Add the oil, swirling to coat the bottom. Add the ginger and cook, stirring until fragrant (about 10 seconds). Add the greens and broth and stir once then cover. Reduce the heat to medium and cook until the greens are wilted and tender. Add the sesame oil, soy sauce and sesame seeds and toss to distribute seasonings.
